Bucatini These facts are a bit 'my way very simple and quick to do.

Ingredients: Bucatini

tomatoes pezzetoni

mozzarella cheese, grated Extra virgin


oregano salt.

Preparation:
prepare raw tomatoes with a drizzle of olive oil, salt, oregano. Apart from our bucatini cook al dente, drain and pour into a baking dish. Season with tomato, mozzarella, cut into pieces, and finally with the grated cheese. Bring in the oven, previously heated at 200 degrees for about 20 minutes. Bon appetit!

Half a glass of water and juice lemon (or vinegar and water) in equal parts in the microwave. Foul starting at maximum power for 5-6 minutes and then wait a few minutes before removing the glass and go with a soft damp sponge.

The homemade ricotta

Tonight I tried to make ricotta. I must say that it is not difficult.

The only change is that I did not use the cream because I forgot to buy it.
So in the end I used 1 liter of raw milk, 5 tablespoons freshly squeezed lemon juice.

Ingredients for a basket of 250 grams:

  • 1 l
  • genuine fresh whole milk 125 ml fresh cream (optional, makes the final product creamier)
  • 5 tablespoons lemon juice untreated

Bring to a boil the milk and cream, stirring occasionally.
Add the lemon juice, reduce heat and simmer until the flakes are formed of milk and the remaining serum is almost clear.
Extract the cottage cheese whey and wash (I kept the retina of a plastic cheese that I bought in the past, or you can use a colander).
The serum can be used to make a soup.

The most accurate would argue that this is a real cheese, as the name implies, should be obtained with the second milk curds (that the process is repeated with the serum from the advanced machining), but the result is surprising and taste is so mild that you can turn a blind eye!


I try my cmq because serum was not really limpidisso. The taste is really very good.

I think that all there is always a first time ..... no?
I never did jam, but I was always very curious to have them, and then I could not resist to make my favorite Quince: This recipe is from my dear Aunt Emily that makes them always very happy. Thanks Zia!

Ingredients: Quinces


sugar water sterilized jars


Preparation: Wash
good for the quinces, cut into small pieces leaving the skin by removing only the central part.
Place in a saucepan covered with water, and cook for about 1 hour, until to when you can pierce with a fork.
Then go all with the mill and so you get a puree of quince.
Now you have to weigh the mashed potatoes, and I to 2 kg of apple sauce I make good use of 1 kg of sugar.
Put in a casserole applesauce with sugar, and cook over low heat for about 1 hour stirring often. When the marmalade Quinces
reaches the right consistency, pour into jars and seal tightly.

I just wake up the next day with my eyes closed I was in my kitchen to taste the delicious quince jam ........ Favorite?
